Orange Glazed Tempeh

This is my favorite vegan protein dish ever!

So, what is tempeh ?

Tempeh is a fermented soy product that’s a great vegetarian protein source. It contains about 15 grams of protein per 3 ounce serving. It is also high in many vitamins and minerals, including iron, calcium, magnesium and B vitamins. Because it is fermented, tempeh is also rich in pre and probiotics, which may help promote digestive health and potentially reduce inflammation.

Ingredients:

16 ounces Tempeh

2 tsp Tamari sauce

1 1/2 Tbsp Mirin (or rice wine vinegar)

1 Cup Orance Juice

1 Tbsp grated ginger

2 tsp Maple Syrup

1/2 tsp Coriander

2 cloves Garlic, crushed

1 Tbsp Olive oil

1/2 Lime, juiced

1/4 cup sliced scallions

1 handful fresh cilantro, chopped

Directions:

Cut tempeh into bite size triangles.

Mix all ingredients except tempeh and cilantro for sauce.

Pour sauce into a heated saucepan and warm until bubbly.

Add cut up tempeh and simmer for about 10 minutes or until sauce reduces to a thick glaze.

Turn tempeh over and spoon the sauce over to glaze.

Serve tempeh with sauce and top with chopped cilantro.
