Protein Pumpkin Mousse
This high protein, low calorie pumpkin mousse is the perfect fall treat!
It’s easy to make, vegan, high in protein, high in vitamins and fiber and a delicious, guilt free dessert!
Don’t let the tofu scare you….my boys loved this and had no idea it was healthy.
Ingredients:
14 ounces tofu (siken is preferable)
15 ounces canned pumpkin (100% pure pumpkin)
1/4 cup maple syrup
Stevia (I use liquid stevia. How much you use will depend on your desired sweetness)
1 Tbsp Cinnamon (can use more or less depending on your preference)
1 tsp pumpkin pie spice (or to desired flavor)
Direction:
Place all ingredients in a blender or food processor and blend until creamy. Add stevia gradually and to desired sweetness)
Chill for at least 2 hours
