Egg White Muffin Cups

These delicious egg white muffin cups are quick and easy and can be stored in the freezer or refrigerator for a quick breakfast or snack. They are low in calories and loaded with protein. Change them up by adding whatever vegetables you like.

Ingredients:

1 1/2 cups liquid egg whites

1/2 cup bell peppers, chopped

1/2 cup onion, chopped

1/2 cup broccoli, chopped

2 ounces deli ham, chopped

Saute onion and broccoli in a pan until soft.

Pour egg whites in a large bowl. Add all vegetables and ham and mix well.

Pour into 12 cup muffin pan (use non stick pan or spray with oil to prevent sticking)

Bake at 350 degrees for about 20 minutes or until desired consistency.

Makes 12 servings.
